Easy bake Choc Chip Banana Bread + Gingham season
The Boy loves banana bread. And when I say love, he loves it so much that his friends gift him a slice of banana bread from various sources every year for his birthday as a bit of a joke and he ends up with a small pile of banana bread that takes him a week to eat. We have been buying supermarket packaged banana bread during lockdown and I noticed that they all contained preservatives, so when I came across this recipe, I thought it would be a great opportunity to switch to a healthier preservative-free version and with a little less sugar and butter.
I've made this recipe about four times now and each time it tastes delicious, including the time when I halved the recipe because I only had two bananas at home. I knew that The Boy would enjoy home baked banana bread but I had no idea exactly just how much he would love it. And it wasn't just because it tasted good, but he told me it was because I had gone to the special effort of making one of his favourite foods and that made him feel especially loved.
So, in case you're stuck for a present idea or just want to show extra affection for your loved ones, and I don't necessarily just mean your romantic partner - it could even be your mum or dad, a sibling or a friend - you could cook one of their favourite foods for them and I'm sure they will appreciate your efforts!

Easy Bake Dark Chocolate Chip Banana Bread
Prep time: 10 mins
Baking time: 1 hour to 1 hour and 15 mins
Serves: 8 slices

Ingredients:
- 2 cups plain flour
- 2 teaspoons baking powder
- 4 ripened bananas, mashed
- 125 g unsalted butter, softened
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 cup caster sugar (or less if you prefer less sweet)
- 175 g dark chocolate chips (or less if your prefer)
Method:
1. Pre-heat oven to 180 deg Celsius or 360 Fahrenheit. *Tip: I read some recipes that said to crank up the oven to 200 deg Celsius when pre-heating, then reduce back to 18” degC when you pop your banana bread tin in, and the extra heat gives the bread/cake extra rise.
2. Sieve the plain flour and baking powder into a large mixing bowl.
3. Combine and mix the wet ingredients: butter, mashed banana, eggs, vanilla extract and sugar.
4. Place the wet mixture into the dry mixture bowl and mix together. Add in the chocolate chips. Be careful not to over mix as this will toughen the mixture and make the bread dry after baking.
5. Put the combined mixture into a rectangular loaf pan and bake for 1 hour or so. Check with a wooden or metal skewer and if it comes out clean then your banana bread is ready. If not, then bake for an extra 10 to 15 minutes.
